Healthy Tomato Soup
Campbell’s Soup has nothing on this healthy tomato soup! I don’t know about you, but when I think of a comforting, nostalgic meal my mind immediately goes to tomato soup and grilled cheese. What’s not so amazing about Campbell’s Tomato Soup? The ingredients! Learn more about those below.
Tomato Soup Ingredients
When you think of your nostalgic soup, you probably don’t think of fake ingredients, right? Which is exactly the reason that this recipe should replace that childhood favorite for you. Here’s a peek at the ingredients:
- Tomato Puree (Water, Tomato Paste), High Fructose Corn Syrup, Wheat Flour, Water, Contains Less Than 2% Of: Salt, Potassium Chloride, Citric Acid, Natural Flavoring, Ascorbic Acid (Vitamin C), Monopotassium Phosphate, Celery Extract, Garlic Oil.
Of the ingredients highlighted, high fructose corn syrup can contribute towards things such as weight gain and high triglyceride levels. Natural flavoring is far from natural. According to The Food Babe, “the flavor is DERIVED from natural things, but it’s important to remember that this isn’t all it contains…flavors typically contain preservatives, emulsifiers, solvents and other “incidental additives”, which can make up 80% or so of the formulation. Some of the most common incidental additives in flavors include: sodium benzoate, glycerin, potassium sorbate, and propylene glycol (none of which are labeled).” Read more on that here.
Healthy Tomato Soup Specifics
Luckily this recipe is about as simple as it gets! As always, if you can get organic ingredients, definitely opt for that! I love using this nutritional yeast in the recipe. You’re welcome to use different types of tomatoes than called for, but the cherry tomatoes give a unique flavor.

Ingredients
- 4 c cherry tomato
- 2 c low sodium veggie broth
- 1/2 sweet onion, diced
- 4 tbsp nutritional yeast
- 2 tbsp garlic, minced
- 2 tsp parsley
- Salt & pepper, to taste
Instructions
Soup time!
- Add all ingredients to a soup pan and cover on high for ~5 minutes.
- Stir all of the ingredients and turn burner down to low and covered for 10-15 minutes.
- Take an immersion blender and blend all ingredients. If you don’t have an immersion blender, pour into a regular blender.
- Enjoy! I love having with a vegan grilled cheese on low carb bread.
